What makes paella so special? A true paella pan is wide, round, and shallow and has splayed sides. It does not have a lid, instead two looped handles with dips in the middle of the pan so the oil can pool. The shape of the pan, or ‘paellera’, helps ensure that the rice cooks in a thin layer. as thick as "un ditet" which is the width of a finger in Valencian.
Your paella pan can also be used as a serving dish which means when your paella is cooked, simply place the delicious pan of food in the middle of the table. Yum!
